Ingredients: 500 grams of apples; 500 grams of sugar; egg whites (2 pcs.); 10 grams of agar agar (about 0.5 of a teaspoon); 150 ml of water; vanillin.
Directions:
1. Bake the apples in the oven and then make apple puree with a blender, add a glass of sugar to it and leave it to dissolve.
2. Soak agar-agar in 150 ml of water.
3. Prepare a syrup: add the rest of the sugar into the dissolved agar-agar and bring it to a boil.
4. Remove syrup from heat and let it cool slightly.
5. In applesauce with sugar add 2 egg whites and beat the mixture at maximum speed until the mass turns white.
6. Continuing to beat the mass at low speed, pour in the syrup by a thin stream and then continue whisking at maximum speed until a stable foam is obtained.
7. Divide the mass into small silicone molds or squeeze it out with a pastry bag.
